Hello friends, I’m thrilled to share one of my all-time favorite Chinese dishes – Fujian Fried Rice. This flavorful concoction of fluffy rice, fresh seafood and vibrant vegetables will surely make your taste buds sing with delight.

To make Fujian Fried Rice, you’ll need some cooked rice that has been refrigerated overnight. Doing this helps the grains dry out and makes them easier to stir-fry. You can use any type of rice you like; I personally prefer Jasmine rice for its delicate aroma and fluffy texture.

Next, you’ll need some fresh seafood such as shrimp, scallops or squid. Clean and devein the shrimp before cutting it into bite-sized pieces; alternately you could also use chicken or beef if preferred.

Heat up some oil in a hot wok or skillet and stir-fry the seafood or meat until cooked through. Then add diced onions, garlic, and ginger for extra flavor.
